I'm hoping to install Gluu for 2FA/TOTP-only Self-Service -- some subset of Server + Casa, IIUC -- on a resource-limited VM. In a Docker container. What'd be *minimal* Docker-install for just those components to be functional? *Can* less-than-full installs of Gluu Server et al be cherry-picked? Or is it an all-or-nothing install proposition?

Docker compose is provided as a quick start. All the container binaries are open source, so you can make your own distro if you choose.

gr8! so not all-or-nothing. then, what'd be minimal Docker-install of Gluu components for just 2FA/TOTP-only Self-Service to be functional?

I guess minimal for 2FA would be oxauth, oxtrust, ldap. If you want self-service 2FA, you'd need casa and oxd too.
