In response to this ticket: https://support.gluu.org/view/customization/email-validation/1672 I have finally gotten SMTP to work, but I still don't see the option for validating that a newly registered user owns the email account that they signed up with.

You know... when you register for an account on a website, it usually sends you an email with a link you have to click to verify that you own the email account.

This is actually a nice idea. Thanks Paul! I have requested for this enhancement in 2.2 release. https://github.com/GluuFederation/oxTrust/issues/43

Well, I am planning on doing an email validation in the sense of checking that it is a real email through a 3rd party API, and checking that no other user has the email. But it sounds like the platform does not include support for emailing the user a link to verify that they have access to the email account.
